Thai Cucumber Salad
Serves 4-6

1 Large English cucumber
1 shallot, minced
2 green onions, finely sliced
1/2 cup fresh cilantro, roughly chopped
1/4 cup ground or roughly chopped dry roasted peanuts
Dressing:
2 Tbsp vegetarian/vegan "fish" sauce
Juice of 1/2 lime
1 Tbsp soy sauce
1/4 tsp cayenne pepper
1/2 tsp sugar
I make this a lot, I love it. I chill it for 20 minutes before I eat eat it, just to make it a little more refreshing.
